Vegan MoFo #11: Creamy Chipotle Yam Bisque



Good morning, Tuesday.  Here I am with another easy, warming soup recipe.  Avocado is involved. 

Creamy Chipotle Yam Bisque

1 heaping cup diced yam (carrots are a great substitution too)
1/2 avocado
1 tablespoon maple syrup
1 teaspoon chipotle chili powder
1/2 teaspoon sea salt
1 teaspoon lime juice
1 cup warm water

Blend until creamy and warm.  Garnish with more avocado!

I love the combination of spicy chipotle, creamy avocado and sweet yam.  Fall is really great this year.  I'm savoring every moment.

  2. O. M. G. That dish is quite possibly the cutest thing I've ever seen! And it is filled with a beautiful soup! Doesn't get any better :) I bet the chipotle makes this soup extra warming. Yum! And avocado? Sold!
